Chef Victoria Salamanca opened the first Cafe Tola in 2012 at 3612 N Southport offering hand-rolled, freshly cooked empanadas inspired by Latin-American and global comfort food alongside a full espresso bar highlighting Latino flavors, coffees, and spices.

Since then, Cafe Tola has continued to open cafes across Chicago and welcomed sister restaurants  La Casa de Tola  and  Doña Tola .
